Polydextrose has demonstrated its versatility as both sugar and partial fat replacer in many foods. Calorie reduction occurs because polydextrose has an energy value of 1kcal/g compared with fat at 9 kcal/g and sugar at 4kcal/g. It is also a functional ingredient that can play a variety of roles in formulations.
With a low sweetness itself, but ideal for use in combination with intense sweeteners, polydextrose has a superior clean taste which means it can be used in high proportions for up to 50% calorie reduction, even in products with sensitive flavour systems.
